Skillet Cornbread and Berries

Here's a recipe for gluten-free corn bread that works really well in a skillet. I use a mix of cornmeal and coconut flour, so this recipe is gluten-free but not grain-free. This is a member recipe.

You can make any of my no-corn cornbread recipes in a skillet. The trick is to grease the skillet generously with butter or plant-based butter and then warm it up before adding the batter.

I have a handful of grain-based recipes, and most use corn. My Blueberry Corn Muffins is another recipe using cornmeal that has a great texture and combines corn meal with blanched almond flour. And it free!

Back from the archives. This week I bring you Verry Berry Sherbet back from the archives. It's a great way to use frozen berries for a treat. And it's free!
