Roasted Cherry Tomato Salad

Hi there!

In the past, while working full time in a demanding job and caring for my boys, I never had enough time to spend on social media. I literally wrote cookbooks instead of sleeping! Now I'm finally experimenting with videos and other digital formats, so I hope I'm at least amusing you. Many have told me they like to watch videos of recipes and I agree that it helps to see ingredients and techniques in action, so expect more of those.

Roasted Cherry Tomato Salad. The sweetest cherry tomatoes are still showing up in my local markets, so I'm sharing an easy end-of-summer salad (and it's free). It has a simple list of ingredients that pack great flavor and it comes together easily. The salad can also be made into a full meal with some added protein, or it makes a great side salad.

Fall Favorites. This collection has a lot of apple and pumpkin, but hey, it's that time of year in North America. There's a mix of free and member recipes, and one of the most popular recipes is free: my pumpkin bread made with almond flour. I just updated the photos for it but it's the same great recipe.

Starbucks Pumpkin Bread. I've been told by subscribers that my pumpkin bread recipe using almond and coconut flour tastes just like the Starbucks version. It's a member recipe, and a beauty at that. I frost it with honey butter icing. It's also great on its own, or top it with pepitas or other mix of nuts and seeds, or both.

Raw honey. I had an interesting discussion with a subscriber about raw honey and whether it is ok when on SCD. Raw honey is not pasteurized so there is a risk it contains contaminants like bacteria and mycotoxins. Getting raw honey from a trusted source can reduce these risks but they are possible. It is recommended that children under 1 year of age should not have raw honey, because their body isn't ready to handle spores and other contaminants. For folks with a compromised immune system, the same caution should probably be taken. All that said, SCD does permit raw honey, with no additives.
