Pumpkin Bread {coconut flour} and Seafood Porridge


An oversight was quickly fixed. I now have a pumpkin bread recipe using just coconut flour. I love the texture and flavor and hope you will also. It's based on my pumpkin muffins using coconut flour, and both recipes have been updated with a bit less sweetener and a bit more baking soda. Light, airy, spicy.

Seafood porridge. This recipe is inspired by a savory rice porridge I recently had at a congee eatery in Seattle. Like traditional congee, you can customize this grain-free version with various additions, such as seafood, meat, eggs, vegetables, and seasonings. And it can easily be made plant-powered using stir-fried mushrooms and other veggies, along with other protein packed toppings.
