Mint Chocolate Chip Ice Cream

This ice cream hits a lot of checkboxes for me: it’s cool, it soothes my belly, and it has greens in it. It’s also one of the healthiest ice cream recipes I’ve created so far: Mint chocolate chip ice cream using fresh spinach, mint, coconut milk, maple syrup or honey, and a bit of salt. And if you’re avoiding chocolate, no problem. Just leave it out or substitute it with pistachios or walnuts.

It’s also dairy-free, so no cow-based cream here. It’s creamy enough for me but if you want to dial it up a bit, here are a few tricks to make your ice cream creamier while keeping it dairy-free:

  • Use coconut cream instead of coconut milk.
  • Add about ¼ cup soaked cashews or sunflower seeds to the mixture and blend into the ice cream mixture
  • Add about ¼ cup chopped avocado.
  • Add one to two tablespoons of olive oil or avocado oil
