I had planned a new treat for you this week, but alas a combination of travel and less than expected testing results left me waiting to share it. I spent the last week on a design and food retreat in Marrakech, Morocco, so I'll be sharing some new recipes centered around my experiences. Stay tuned!
Free cookie recipe this week. For this week my Linzer Cookie recipe is free, and it goes well with Raspberry Jam or your favorite jam or preserves.
Potato Latkes
Latkes and pancakes. It's the start of Hanukah at sundown today, December 14th. Whether you celebrate or not I recommend my Potato Latkes, also known as potato pancakes (also free this week!). No flour is involved here: just eggs, potatoes, onions, salt, and oil. The technique I use results in a thin pancake with a crispy, crunchy exterior and a soft interior. Feel free to make them as you prefer, either thinner or thicker.
If you're not eating potatoes or you're staying low carb, try my Zucchini Pancakes (free recipe). It's an early recipe that makes tender flavorful pancakes with the addition of Parmesan or feta cheese. This is a free recipe.
Zucchini Pancakes
Grated zucchini video. Here's a quick refresher on how to grate zucchini using a food processor.
I can't wait to share more on Moroccan mint tea, tagines, and other wonderful food inspired by my trip.
Wishing you a great week ahead.
Sending love and good health,
Erica

I'm on a bit of a fermented food run so just a warning that you might see more recipes that have at least one ingredient from this food category. Miso paste is a fermented food with a salty umami flavor. It's usually made with soybeans. You can also find miso made from chickpeas; I like this brand for miso and they make it with both. Types of salt: kosher,...
Cookbooks | Recipes | Videos Blackened Shrimp and Pineapple Coleslaw If it's the middle of winter where you are at this moment, here's a good reason to make believe you're in paradise. I'm bringing you a bit of tropical flavor with this recipe for blackened shrimp and pineapple coleslaw (and it's free). It's quite flexible. Serve it alongside fried rice, or swap the shrimp for another blackened protein. The coleslaw comes together really quickly when you use coleslaw mix in a bag. That said,...
Cookbooks | Recipes | Videos Moroccan Roasted Carrot Salad I have a new Moroccan-inspired recipe for you this week. It started out as roasted carrot sticks and progressed to a full-blown salad, complete with herbs and dried fruit. Quick tip: When you embark on this salad, make extra carrot slices so you can nibble on them while making the salad and still have enough carrots to add to the salad. Fresh Mint Tea I also had a lot of mint in my refrigerator this week. Some went into the salad and...
