Creamed Kale and Free Recipe

Cookbooks | Recipes | Videos

Hello!

I have a new member recipe and a new free recipe for you this week.

Creamed kale is similar but not the same as creamed spinach, and the nutrient profile is a bit different. If you're trying to get more vitamin C, K, and calcium into your body, pivot to kale. I also offer two ways to "tame" kale, meaning get rid of the slight bitterness and tenderize it. They're both easy and so is the recipe. This is a member recipe.

Back from the archives. I cleaned up and republished two recipes: the Cinnamon Cookie Pie Crust and Veggie Stir-Fry. Both are member recipes.

New recipe format! it's been a long few weeks working on a much needed upgrade and new recipe format. It takes a lot to keep my site running smoothly, and protect all the data.

Here's a quick video I made on the new recipe format:

Some other great site news. With my latest upgrade, my site performance is in the excellent range. Over 75% of people use my site on a mobile device (a phone) and the mobile performance just increased from 87% to 96% which is pretty awesome. My accessibility is at 100% which means a lot to me. I like to know that it's easy to read and use.

Another time gadget. I also added another temperature gadget to my holiday tip sheet below. It's a three channel digital timer, so you can track three separate things cooking at once. Of course you can also use the timer on your phone but it's really handy to have a timer near your cooking space instead of your phone, given the splattering and spills that can happen. And you can leave your phone out of the way to enjoy the cooking time without scrolling.

Warmly, from my kitchen to yours,

Erica

Free recipe of the week! If you love pumpkin pie filling but couldn't care about the rest of it, this recipe for pumpkin custard is for you. It's also a nice break from all the pie crust action going on this time of year and it's easy to fix up with whipped cream or ice cream.

Holiday Recipes. As we approach the holidays, I love to share my collection of grain-free, gluten-free, and dairy-free holiday recipes. Some of these recipes are free, some also appear in my cookbooks, and some are member recipes.

Whether you're making meals for yourself, a small crowd, or a big one, here are some tips that have helped me over the years.

  • Test new recipes at least a few days before.
  • Plan ahead and mark it on your calendar.
  • Create a checklist and mark stuff off as you go.
  • Say yes to anyone who wants to bring food.
  • Ask for help with the preparation.
  • Make stuff ahead. Cranberry sauce, pies, and sides can be made ahead, and vegetables can be chopped and prepped for cooking ahead of time.
  • If something flops, let it go. Or turn it into something else.
  • Make more than you need so you have leftovers for the next few days, and to freeze for later.
  • Exchange clean-up help for leftovers.

Time and temperature. I rely heavily on these two items to prevent under or overcooking things: ThermoPro kitchen timer and ThermoPro digital thermometer. There's a third I'm going to get soon: it's a three channel digital timer!

Glazed Miso Salmon Bowl

Cookbooks | Recipes | Videos Glazed Miso Salmon Bowl New member recipe. This week I'm sharing a quick and easy Glazed Miso Salmon Bowl. I'm on a bit of a fermented food run so just a warning that you might see more recipes that have at least one ingredient from this food category. Miso paste is a fermented food with a salty umami flavor. It's usually made with soybeans. You can also find miso made from chickpeas; I like this brand for miso and they make it with both. Types of salt: kosher,...

Blackened Shrimp and Pineapple Coleslaw

Cookbooks | Recipes | Videos Blackened Shrimp and Pineapple Coleslaw If it's the middle of winter where you are at this moment, here's a good reason to make believe you're in paradise. I'm bringing you a bit of tropical flavor with this recipe for blackened shrimp and pineapple coleslaw (and it's free). It's quite flexible. Serve it alongside fried rice, or swap the shrimp for another blackened protein. The coleslaw comes together really quickly when you use coleslaw mix in a bag. That said,...

Moroccan Roasted Carrot Salad

Cookbooks | Recipes | Videos Moroccan Roasted Carrot Salad I have a new Moroccan-inspired recipe for you this week. It started out as roasted carrot sticks and progressed to a full-blown salad, complete with herbs and dried fruit. Quick tip: When you embark on this salad, make extra carrot slices so you can nibble on them while making the salad and still have enough carrots to add to the salad. Fresh Mint Tea I also had a lot of mint in my refrigerator this week. Some went into the salad and...
