Discover the Art of Bircher Muesli

Cookbooks | Recipes | Videos

Bircher Muesli is a popular Swiss oatmeal made up of raw nuts, shredded apple, seeds, fresh or dried fruit, and oats that are soaked in milk, yogurt, and/or cream for a few hours or overnight. It was first introduced to the world during the 19th century by Swiss physician, Maximilian Bircher-Brenner.

Have no fear grain-free fans: I have a grain-free Bircher Muesli for you (and this recipe is free!). The oats are replaced with nuts, seeds, and fruit. If you're gluten-free and eat quinoa, you can replace some of the nuts and seeds with quinoa flakes. If you're staying low carb, replace the fruit with more nuts and seeds and use a low carb sweetener to bring the sweetness up a bit.

Newsletter update. I'm moving my email off Substack. You don't need to do anything! I'm just letting you know in case you notice newsletters no longer appear on Substack. Some readers have found it confusing, and I don't have any plans to offer a paid newsletter. So I'm back to a simple email newsletter that's easy for you to subscribe to and update.

Wishing you a delicious week ahead.

xoxo,

Erica

Cookbooks | Recipes | Videos Invisible Apple Cake {gâteau invisible aux pommes} Here's my grain-free take on invisible apple cake, or gâteau invisible aux pommes. The original recipe went viral after appearing on a French food blog. I just recently discovered it and realized it would make a great grain-free cake. It's simple to make, moist, light, and tender, and has a custard texture. The thin slices of apple are held together with a small amount of cake batter and as the cake bakes they...

Cookbooks | Recipes | Videos Pumpkin Bread {coconut flour} An oversight was quickly fixed. I now have a pumpkin bread recipe using just coconut flour. I love the texture and flavor and hope you will also. It's based on my pumpkin muffins using coconut flour, and both recipes have been updated with a bit less sweetener and a bit more baking soda. Light, airy, spicy. Seafood Porridge {grain-free} Seafood porridge. This recipe is inspired by a savory rice porridge I recently had at a congee...

Cookbooks | Recipes | Videos Shakshuka. I've been feasting on Shakshuka, a staple in North Africa and the Middle East. I've made a few variations: one with eggs, kale, and spinach, another with lentils added to the mix, and of course the classic version with just eggs. There are so many options to try with this quick and easy dish, and it's great any time of day. Banana Bread {almond & coconut flour} Other nut flours. Someone recently asked me what to do with some pecan and walnut flour they...
